Afghan Bolani/Samosa Recipe - Snapchat Version

You've probably heard "empanada" or "samosa/sambusa". This is somewhat the same thing. It's called Bolani and is a favoured, common dish in Afghanistan and you can also buy them on the streets.
It has a crisp exterior and is filled with spicy vegetable stuffing. It can be deep-fried or fried with less oil on a pan (which I've done). If oyu want a healthier version you can also bake them in the oven.
The filling is usually potatoes or leek - I made bolanis with the potato filling.

This is a snap-chat version recipe and I had lots of fun making it :D The challenge was that I couldn't write as mush as I wanted to each picture; only one line. Oh, and I wrote "saute onions" instead of "fry onions". Sorry about that.

Ingredients:
For the dough
25 grams yeast
1 cup warm water
½ cup oil
400 grams of flour
Enough water to knead the dough
salt
oil for frying

For the filling
10 potatoes
2 onions
Salt, pepper
Optional: paprika, turmeric-powder, oregano and chilli-powder
You can also fry 4 finely chopped garlic together with the onions.

Instructions:

When you make the dough start with adding the yeast to the water and mix well until it's completely dissolved. Then add the rest of the ingredients.

I like to fry them on lots of oil and not just two tablespoons or something. They turn out crispier the more oil you use. Just remember: dont place the bolani on the pan before you have heated the oil.

Brown Sugar Cake

I didn’t think the cake would turn out as it did. When looking at the ingredients I just expected a “normal” cake because of how simple it was. Therefore, I was pleasantly surprised at how delicious the cake was. The crumb was really beautiful – moist and smooth, and dense in a good way. Topped with chocolate frosting and white chocolate "curls", the cake was irresistible and my guest helped themselves to another and another slice without me politely asking them to take a slice more.

Ingredients:
3 cups flour
½ tsp baking powder
¼ tsp salt
1 cup milk
1 ½ cups soft butter
500 grams dark brown sugar
½ cup white sugar
5 eggs

Instructions
Preheat oven to 200° (well, in my case it was 200°, but it may differ based on what kind of oven is used)
Combine flour, baking powder, salt in a mixing bowl
Beat butter until it becomes light and fluffy. While still mixing, slowly add the brown sugar and then the brown sugar.
Add the eggs, one by one, and beat well after each time you add a new one.
Add half the milk and half the flour-mixture. Beat well. Then add the other half of the milk and flour-mixture and beat until fully incorporated.
Scrape the batter into a greased pan and place it inside the preheated oven until a knife or wooden skewer inserted into the center comes out clean. The baking time depends on your oven – it took 30 minutes for the cake to be baked in my oven, but it may take longer or less time in your oven.
Take cake out and let cool.

I topped mine with chocolate frosting which complemented it really well!

You can also top it with caramel glaze or melted chocolate :D I have tried both and they both go very well with this fabulous cake!

Chocolate Chip Cookies Recipe

I have litterally searched forever to find the perfect chocolate chip cookie recipe. I found some really good ones, but they weren’t perfect. So I decided to come up with my own recipe. And I have to say that I’m really proud of it ^.^
The cookies tastes delicious and they are just like (if not better) than the ones you can buy in the stores. I like my cookies really crunchy and these definitely were. N
ot soft or chewy inside.
Rule #10 of making good cookies is that the person beside you should be able to hear you chewing on the cookies. Lol :D

You can add white chocolate too or substitute the chocolate with cranberries. That'll taste delicious too!

Ingredients:

vanilla (I used one tsp vanilla sugar, but you can use as much as you like)
125g butter
200g brown sugar
1 egg
1 big tsp baking powder
225g flour
100g chocolate chips/roughly chopped dark chocolate

Instructions:
Mix the vanilla, butter and brown sugar in a bowl and add the egg.
Then add ´the baking powder, flour and lastly the chocolate chips/chopped chocolate

Now you have two options.

1. option:
Roll the dough to a 15cm long "suasage" and cover it tightly with plastic film/food wrap. Put it in the fridge until the dough has gotten a bit hard and cold. Cut it in 20 "slices" and put them on a baking tray.

or

2.option:
Take some of the dough in your hand, roll it into a ball and put the "ball" on the baking tray. Press the ball flat with your hand. Repeat.

Put the baking tray in the oven (200 celcius) for about 10 minutes.
Try not to eat them when they have just gotten out of the oven and are suuper hot. I know it's tempting, but don't ;)
When they have cooled down a bit, eat them with a cold glass of milk. Thats the best way to eat a cookie ^.^

Tell me what you think of them, if you have made them! :)

The Best Vanilla Cupcake Recipe Ever

These cupcakes are really moist, airy and spongy and I really love the subtle taste of vanilla they have. The cupcakes tastes fantastic and it doesn’t take so much time to make at all! Top them with vanilla or chocolate frosting and you are in heaven!

You can also make a layered cake using this recipe. Just make a double portion of the batter + the frosting to get three layers.

For the cupcakes
80g soft butter
280g sugar
240g flour
1 tbsp baking powder
2½ dl milk
½ tsp vanilla extract or one tbsp. vanilla sugar
2 large eggs

For the vanilla frosting:
500g icing sugar
160g butter
½ dl milk
½ tsp vanilla extract or 1 tbsp vanilla sugar
A few drops of food coloring

Instructions:

Preheat oven to 190 C

Beat the flour, sugar, baking powder and butter until you get a sandy consistency, and everything is combined.

Whisk the egg, vanilla extract and milk together in a separate bowl for a few seconds, then pour into the flour mixture and continue beating until the mixture is smooth. Don’t over mix.

Spoon the mixture into the paper cases until two-thirds full and bake in the preheated oven for 20–25 minutes, or until light golden and the sponge bounces back when touched. A skewer inserted in the centre should come out clean.
Leave the cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
 *
Frosting:
Beat the icing sugar and butter together in a freestanding electric mixer with a paddle attachment (or use a handheld electric whisk) on medium-slow speed until the mixture comes together and is well mixed. Turn the mixer down to slow speed.

Continue beating until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten, the fluffier and lighter it becomes.
When the cupcakes are cold, spoon the vanilla frosting on top. Enjoy! :D <3

Super Moist and Delicious Lemon Cake

This is the best lemon cake I have ever tasted. I have baked it countless times and it’s a favorite in my household. It’s sooo moist and soft inside, and the syrup on the top of the cake makes it perfect. It is so easy to make and because it tastes delicious! But I am warning you… This cake is truly addicting!
I normally make this cake late at night, and leave it sitting overnight; to make sure that it has enough time to absorb all the syrup :)

Ingredients:
325g sugar
3 eggs
Zest from 2 lemons
350g flour
1½ tsp baking powder
2½ dl milk
200g soft or melted butter
Vanilla (optional, but tastes great!)

Lemon syrup:
Freshly squeezed lemon juice and zest from 1 lemon
50 g confectioners sugar (you can also use ‘normal’ sugar)

Instructions:
Preheat the oven to 170 C
Mix sugar, eggs and lemon zest well
Add milk, vanilla, flour and baking powder – mix until the mixture is light and fluffy.
Add the soft/melted butter and mix until the mixture is smooth and glossy.
Pour the mixture into a loaf tin (remember to grease it or line it with baking paper)

Bake in the preheated oven for about 45-55 minutes, or until golden brown and the cake bounces back when touched.

While the cake is baking and filling the house with a great scent/smell, prepare the syrup.
Put the lemon juice and zest, sugar and 2 dl water in a small saucepan and bring it to a boil over low heat.
Boil until it has a thin syrup consistency. When the hot cake comes out of the oven, pour the syrup all over the top. Leave to cool slightly in the tin before turning out onto a wire cooling rack to cool completely. Enjoy! :D

Gorgeous Cinnamon Twists Recipe

These cinnamon twists (I don't really know what to call them) are AMAZING! They are soo soft inside, that they kind of melt in your mouth, and they look so beautiful! They would look fabulous on any table!

I couldn't really take some good pictures of them, because everyone wanted to eat them, so I had to hurry ;)

It's one of my favourite "cakes" now, and I honestly can't get enough of them. Well, I guess I won't be having a six pack this summer...

Ingredients:

5 dl cold milk
50 g yeast
1 big egg
1 kg flour
150 g sugar
15 g salt
1 tsp cardamom
150 butter
1 tsp vanilla (optional)

Filling:

125 g very soft butter
125 g suger (just normal white sugar)
2 tbsp cinnamon

Also:
1 egg
1 tbsp water
A bit sugar to sprinkle with

Instructions (it's a bit long):

Pour the cold milk in a bowl, and stir the yeast into it.
Add eggs, flour, sugar, salt, cardamom (and vanilla if you want).
Knead the dough until it’s really smooth. It takes about 20 minutes, so you’re lucky if you have a mixer.
Cut the butter into small pieces and add them to the dough (not at once but a few pieces a time).
Knead the dough for another 20 minutes (The long kneading times are really important for the finished result).
Let the dough raise about 1½ hours in a warm place with a cloth over it.

*

Turn the dough out onto a floured surface and roll it into a rectangle – 40 cm wide and 50 cm long.
Mix the butter, sugar and cinnamon together and spread it onto the dough.

Ok, here comes the kind of tricky part (keep in mind that I'm very bad at explaining stuff):

Fold a third of the dough into the middle and fold the other third over the first, so you end up with three layers
Roll the dough so it’ 30 cm wide and 50-60 cm long. Cut it into 16 strips.
Twist each strip by grasping each end and twist the dough opposite from each end, giving it 4-5 twists. Be careful and don’t squeeze too hard.
Take the twisted/winded dough strip up with one hand and twist it two times around your index and middle finger. Put the remaining bit of the strip over the two twists, place it between your index- and middle finger and pull your fingers to you so the piece of strip kinda gets stuck inside the “bun”.

*

Place the twists onto a baking tray and let them raise to double size (about 2 hours)

*

Brush them with the egg and water mixed together and sprinkle them with sugar.
Bake them at 200 C in 12-14 minutes or until they are golden brown.
Enjoy! Leave a comment below and tell me what you think :D

Spicy Potatoes with Onions and Tomatoes Recipe

A dish that'll surely impress with all its flavours, whether it's for your family, friends or just yourself! :) It doesn't take so long time to make, tastes absolutely delicious and its not expensive either. It goes very well with other main dishes like rice

Ingredients:

4-5 boiled potatos (not boiled to the point where they are too soft and breaks easily)
2 onions
2 tomatoes
4 cloves of garlic
Salt and pepper
½ tsp paprika
½ tsp curry
1 tsp oregano
cumin seeds (optional)
butter/oil for the pan

Instructions:

Let the butter melt/pour oil into a pan.

Chop the onions, and put them into the pan.

Chop the cloves of garlic and the potatoes. Put them into the pan when the onions have gotten a nice golden color.

Add salt, pepper and the rest of the spices (and other spices if you want).
Wait a few minutes, but still keep an eye on it, so it doesn't burn

Slice the potatoes, so your "potato rings" are about one cm thick. Add it to the pan and carefully mix it all together.
Wait a few minutes, and then turn off the heat.

Serve with tatziki, just yoghurt, pesto or anything that you like :)

Done. Easy right?
