Afghan Bolani/Samosa Recipe - Snapchat Version


You've probably heard "empanada" or "samosa/sambusa". This is somewhat the same thing. It's called Bolani and is a favoured, common dish in Afghanistan and you can also buy them on the streets. 
It has a crisp exterior and is filled with spicy vegetable stuffing. It can be deep-fried or fried with less oil on a pan (which I've done). If oyu want a healthier version you can also bake them in the oven.
The filling is usually potatoes or leek - I made bolanis with the potato filling.



This is a snap-chat version recipe and I had lots of fun making it :D The challenge was that I couldn't write as mush as I wanted to each picture; only one line. Oh, and I wrote "saute onions" instead of "fry onions". Sorry about that.


Ingredients:
For the dough
25 grams yeast
1 cup warm water
½ cup oil
400 grams of flour
Enough water to knead the dough
salt
oil for frying

For the filling
10 potatoes
2 onions
Salt, pepper
Optional: paprika, turmeric-powder, oregano and chilli-powder
You can also fry 4 finely chopped garlic together with the onions.

Instructions:

When you make the dough start with adding the yeast to the water and mix well until it's completely dissolved. Then add the rest of the ingredients.
  
     
          



I like to fry them on lots of oil and not just two tablespoons or something. They turn out crispier the more oil you use. Just remember: dont place the bolani on the pan before you have heated the oil.

Brown Sugar Cake






I didn’t think the cake would turn out as it did. When looking at the ingredients I just expected a “normal” cake because of how simple it was. Therefore, I was pleasantly surprised at how delicious the cake was. The crumb was really beautiful – moist and smooth, and dense in a good way. Topped with chocolate frosting and white chocolate "curls", the cake was irresistible and my guest helped themselves to another and another slice without me politely asking them to take a slice more.


Ingredients:
3 cups flour
½ tsp baking powder
¼ tsp salt
1 cup milk
1 ½ cups soft butter
500 grams dark brown sugar
½ cup white sugar
5 eggs

Instructions
Preheat oven to 200° (well, in my case it was 200°, but it may differ based on what kind of oven is used)
Combine flour, baking powder, salt in a mixing bowl
Beat butter until it becomes light and fluffy. While still mixing, slowly add the brown sugar and then the brown sugar.
Add the eggs, one by one, and beat well after each time you add a new one.
Add half the milk and half the flour-mixture. Beat well. Then add the other half of the milk and flour-mixture and beat until fully incorporated.
Scrape the batter into a greased pan and place it inside the preheated oven until a knife or wooden skewer inserted into the center comes out clean. The baking time depends on your oven – it took 30 minutes for the cake to be baked in my oven, but it may take longer or less time in your oven.
Take cake out and let cool.

I topped mine with chocolate frosting which complemented it really well!




You can also top it with caramel glaze or melted chocolate :D I have tried both and they both go very well with this fabulous cake!
